Wine:

The 2021 white Sancerre Équilibre captures the full force of its limestone terroir, working in this cool, late vintage to magnify Sauvignon Blanc in a precise, impressively vital reading of great rectitude. Notes of wisteria and elderberry come together in a fresh, invigorating framework of perfect ripeness and sapid scope, reminiscent of the Dagueneau style! This is a great gastronomic wine, best served with seafood gratin, for example.

Vinification:

Hand-harvested, long-pressed, static cold settling, aged for 12 months in truncated wooden vats, demi-muids and cigars.

The estate is run using organic farming methods, which are not certified.

Color:

Pale yellow with green highlights.

Nose:

Intense notes of wisteria and elderberry.

Palate:

Supported by a beautiful sapid scope, this perfectly mature wine reveals a precise, impressively vital framework.

Temperature:

Serve between 10 and 12°C in a large glass.

Food and wine pairing:

Enjoy with seafood au gratin, oysters or prawns in tempura, Sancerrois goat's cheese, including the famous crottin de Chavignol.

Cellar aging:

From now until 2030 and beyond for enthusiasts.

Jean-Philippe Agisson is no ordinary wine-maker: having worked for Alphone Mellot and then Domaine Dagueneau, over the past 15 years he has acquired solid experience and unrivalled dexterity in the art of handling Sauvignon Blanc. His wines are simply breathtaking in their finesse and elegance. These exacting little gems are grown on just 1 hectare of white soil in Sancerre and 0.5 ha in Tracy-sur-Loire, in the Pouilly-Fumé appellation. Jean-Philippe and his wife Stéphanie tend this pocket-sized vineyard, which is farmed organically and biodynamically, like a garden. Of course, quantities are ridiculous, and the first to arrive will be the first to be delighted!
