Coming from specific parcels, the 2021 red Terrasses du Larzac Les Ouvrées prominently features Syrah, which contributes half of the blend alongside Mourvèdre and Grenache. This single-vineyard wine, aged in wood and concrete egg, presents a refined ensemble, with juicy, ripe, persistent fruit, centered on spicy notes and depth of style. It's a wine meant for aging, outstanding in its delicate concentration and freshness. It pairs beautifully with red meats or game.

Vinification:

Hand-harvested. Vinification with 40% whole grapes, gravity-fed vatting and de-vatting, gentle extraction with pumping over for 2/3 of the fermentation, followed by some punching down of the cap, temperature control, 3-week vatting period. Aged 22 months in foudres and demi-muids.
