Wine:

The 2020 Red Saint-Emilion Grand Cru La Dame de Onze Heures is a wine that stands out in the Bordeaux landscape. Aged in terracotta jars and tuns, it mixes styles and influences to perfection, carving its own path to success. On this very beautiful vintage, it expresses nice fruity aromas in a ripe and consistent palate with smooth tannins. It is a very seductive and delicate wine to discover at once.

Vinification:

Hand harvested with sorting of the grapes. Vinification in stainless steel vats, vatting without cold maceration for 26 days. Aged for 16 to 18 months, 60% in tuns, 30% in Italian jars and 10% in Limoge sandstone eggs.

Certified Organic & Biodynamic wine.

Color:

Intense dark red with carmine highlights.

Nose:

Fine and pure, characterized by delicate aromas of black fruits and highlighted by a touch of graphite.

Palate:

This wine is ripe and silky with a beautiful balance and precise and velvety tannins underlined by a long finish and an impeccable freshness.

Temperature:

Serve at 16 to 18°C.

Food and wine pairing:

Lamb tagine with eggplant, risotto with porcini mushrooms, roast beef and its reduced cocoa sauce.

Béatrice and Vincent Rapin have a keen eye for detail. As attentive winemakers, they work on this small plot of barely 1.5 hectares with an almost monastic devotion. Practicing organic agriculture and applying the precepts of biodynamics to their vines, they undertake an enormous amount of work directly in the vineyard, that frees them from any interventionism in the cellar. Although limited and reserved for connoisseurs only, their confidential production was quickly acclaimed by critics, and Stéphane Derenoncourt, a famous Bordeaux winemaker and consultant, personally encouraged them. This wine is so unusual in the Bordeaux landscape, challenging the traditional codes of winemaking to deliver a pure, uncompromising and fruity wine.
