Wine:

The 2019 Red Côtes du Roussillon Villages is another triumph. Sourced from the slopes of the Agly Valley and crafted without any oak influence, it delivers bold, mouthwatering flavours with notes of black fruits and cherry. This wine is full-bodied, structured, and generous, yet retains a vibrant freshness, perfectly capturing the essence of Roussillon’s terroirs in a beautifully balanced Mediterranean style. An excellent choice to pair with grilled or slow-cooked meats.

Vinification:

Hand harvested. 100% destemmed vinification. Long maceration for 4 weeks. Aged in concrete vats.

Color:

Dark garnet red.

Nose:

The first nose is dominated by graphite, with intense aromas of macerated black fruit and a hint of spice.

Palate:

The wine opens with a powerful and intense palate, unfolding a warm, concentrated structure with fine tannins and a long, sapid finish.

Temperature:

Serve between 14 and 16°C.

Food and wine pairing:

Shoulder of lamb confit with thyme and morel mushrooms, tournedos Rossini, spit-roasted pig and tian of Provençal vegetables.
