Wine:

Freshly released from the cellars after 17 years of slow maturation, the Dom Pérignon Plénitude 2 Vintage 2006 Champagne reveals a new facet of its character and vintage. Pastry notes and ripe fruits fill a broad yet airy structure, still marked by the powerful "Dom Pé" signature style, but with renewed charm and delicacy. The finish extends the wine into deep, flavorful territory, with an astonishingly effortless palate. Another stroke of genius. Rated 95/100 by Parker.

Vinification:

Hand harvested. Produced from a single year's harvest. Matured for 17 years in the cellar, from 2006 to 2023.

Golden, sparkling.

Nose:

Beautifully ripe fruit with a mineral edge and marked by flavors of fig, cocoa, mocha, roast, brioche and honey.

Palate:

The wine walks a fine line between tension and weightlessness. The precision is extreme, tactile, dark and chiseled. The whole persists, racy, on a seductive, liquorice line.

Temperature:

Serve between 10 and 12°C.

Food and wine pairing:

Aperitifs, shellfish: roasted lobster or slipper lobster with tarragon butter, turbot fillet with beurre blanc, cheeses such as 24-month Comté, mature Brie de Meaux, extra-aged Mimolette.
