Wine:

The Puligny-Montrachet 2008 is grandiose. Its honesty and minerality make the noble expression of the Chardonnay sparkle with deep grace. The white fleshed fruit and citrus notes are floral and subtle. Refined and minimalist, the delicacy of its texture weaves a powerful spell.

Vinification:

Hand harvested, traditional vinification, aging in oak casks in 19th Century vaulted cellars providing ideal conditions, for a period of 12 to 14 months. These casks, that come from quality coopers, have been carefully selected for their fine grain and light toasting.

Poultry in a creamy sauce, pike "quenelles", lobster, Bresse chicken, grilled fish.

Cellar aging:

Enjoy up to and including 2014

Since its founding in 1825, the Faiveley family has devoted most of its resources to acquiring vines located in the best "climats". Today the estate is, in terms of surface area, one of the largest in Burgundy. Erwan Faiveley, the 6th Faively of the name, recently took it over. His sole desire: make "haute couture" wines!
