Wine:

With its deep color, the 2018 Rosé IGP Pays des Bouches-du-Rhône Les Grands Carmes is a singular, intense and bright rosé wine. Its aromas of stone fruit, raspberries, cherries and delicate spices are balanced by a fresh and delicate structure, forming a harmonious whole. A rosé made for the table, to pair with white meat of grilled fish.

Vinification:

Hand harvested and destemmed, fermented and aged on fine lees for 14 months in small oak barrels.

Color:

Copper-colored rosé of beautiful intensity.

Nose:

Aromas of cherry and raspberry underlined by spicy notes.

Palate:

Both fresh and delicate, this wine with a dense structure possesses a great harmony of flavors.

Temperature:

Serve between 10 and 12°C.

Food and wine pairing:

Tian of Niçois vegetables, grilled poultry, red mullet with rosemary on the grill or pan-fried.

Nowadays, Château Simone is undoubtedly one of the most famous and sought-after wines of Provence. Freed from any invasive technicality, their wines are precise marqueurs of their exceptional terroirs, filled with all the flavors from the south. 

These wines, named “Grands Carmes”, pay tribute to the monks who lived in the ancient bastide on the estate. These wines are exclusively reserved for our Valap members!
