The 2021 Sydre Argelette cider is immediately intriguing, with its old gold color and persistent bubble. The nose conjures images of baked apples intertwined with spices, cinnamon, and honey. The palate reveals the complexity of this blend of numerous apple varieties, offering a unique sweet-bitter balance. This is a gastronomic cider that pairs wonderfully with pan-seared foie gras accompanied by spiced apple compote. It can be aged for 5 years or more, or opened today for those who can't wait. Rated 94/100 by the Committee.

Vinification:

Hand-picked apples. L'argelette (the name given by old-timers to the schistose pebbles) is a complex cuvée composed of a maximum number of varieties from old trees. A blend of as many varieties as possible (bitter, sweet and tart), in keeping with the vintage.

Color:

Old gold with amber highlights and a persistent cordon.

Nose:

Spicy, honeyed, cinnamon and baked apple flavours.

Palate:

This syrup reveals all the complexity of this blend of a multitude of apple varieties, resulting in a bittersweet balance.

Temperature:

Serve between 10 and 12°C.

Food and wine pairing:

A gourmet Sydre to be enjoyed with pan-fried foie gras, diced apple compote with spices (cinnamon, star anise, vanilla) and endive bitters.
