Wine:

A Committee favorite rated 92/100, the 2022 red Corbières-Boutenac Cuvée Prestige releases exceptional fruit, with notes of tapenade, black olive, and dry herbs, indicative of a juicy Carignan. This very pretty aromatic juice finds a perfect echo on the palate, giving way to a magnificent structure, dense, broad, and velvety, framed by silky tannins. The ensemble is superbly balanced, without any heaviness of style, featuring beautiful freshness and a continuum of absolutely magnificent black fruit flavors. A very fine wine best paired with slow-cooked dishes, like beef cheek or black olive lamb stew.

Vinification:

Harvested by hand. Vinification with indigenous yeasts. Vatting from 12 to 18 days. Aged 50% between 6 and 12 months in barrels of 1 to 5 wines and 50% in stainless steel tanks.

Shiny deep purple red.

Nose:

Powerful aromatic structure with aromas of black fruits, black olives and dried maquis herbs.

Palate:

The initial impression on the palate is superb, dense, rich and velvety, with silky tannins and a perfectly controlled balance. In addition to the long, pleasant persistence, the retro-olfaction is elegant, with flavors of ripe red fruit.

Temperature:

Serve between 14 and 16°C.

Food and wine pairing:

Hare à la royal, braised beef cheek with a little anchovy, sautéed lamb with black olives, beet tartar and blackcurrant condiment.
