Wine:

It would make many Condrieu blush... The 2023 white IGP Pays d’Hérault Hasard is a pure Viognier with a very pure nose, highlighted by fine notes of bergamot and peach skin, creating a fresh ensemble. The sparkling, fresh palate continues with the delicate and crisp character of Viognier, ending with a lovely finish that extends the pleasure. This is a remarkable discovery! A Selection Committee favorite, rated 92/100.

Vinification:

Hand harvested. Direct pressing after de-stemming. Vinification with indigenous yeasts. Vatting for 30 days. Aged for 6 months in stainless steel vats.

Color:

Intense bright golden yellow.

Nose:

Very pure, with delicate notes of bergamot and peach skin on a fresh, fruity finish.

Palate:

The palate is sparkling, with lots of freshness, a crisp viognier character and delicate balance and elegance.

Temperature:

Serve between 10 and 12°C.

Food and wine pairing:

Crab mousseline in brioche, poached filet of Saint Pierre with vegetables, asparagus and lemon mousseline, snacked scallops.

A native of the region, Pierre Vaïsse has been established since 2007 in the Aniane area, at the heart of the Terrasses du Larzac. Today, he is a recognized and appreciated figure among wine enthusiasts, following in the tradition of farmer-winemakers.

His organically cultivated vineyard, painstakingly built over the years, now spans 18 hectares on the pebbles, clays, and limestones of the area. Inspired by his friends Laurent Vaillé (La Grange des Pères) and Frédéric Pourtalié (Moncalmès), Pierre Vaïsse produces deep wines that combine body and smoothness, with velvety, creamy textures enhanced by long aging processes.
